Each year, a portion of wine is taken from the bottom, while new wine is added to the top. In this way, the average age of the wine in the soleira system increases each year, and with it the complexity.”

Champagne, France
Winegrowers all over the world try to copy the style of the Champagne region, but that is impossible. The thick layer of chalk on which the grapes grow gives Champagne its unique, mineral character. This subsoil also retains heat well, which allows the grapes to ripen well. The most common grape varieties in Champagne are Chardonnay (white), Pinot Noir and Pinot Meunier (both blue). The Sadi Malot winery is located in the so-called Montagne de Reims, the area par excellence for the very best Pinot Noirs.
