About the winemaker

“Appassimento is a technique that is older than the road to Rome. In this method, the grapes are harvested extremely late, almost when they are like raisins. Then we let the grapes dry for another 5 weeks in special crates in the attic. This process causes about 35% of the moisture to evaporate from the grapes, but it intensifies the aromas in these grapes significantly.”

"Drogen moet mogen. We treffen het meer en meer: wijn gemaakt van soms wat meer soms wat minder ingedroogde druiven. Techniek: om de boel geconcentreerder en zoeter te krijgen. 
Pruimen worden zo pruimen op sap. Bramen transformeren tot bramenconfiture. Kersen komen plots uit de kersentaart. Met wat chococrumble en een zoet espressootje ernaast. 
 Is het té: dan kun je zo'n wijn bijkans op je brood smeren.  Is het precies goed dan kun je het schenken. Dan tref je toch ook nog wat zuren en specerij en is het een weldadige wijn die heerlijk combineert met bijvoorbeeld paddenstoelenragù met spaghetti. "
