About the winemaker

“This is not grape juice, but real wine. Thanks to modern techniques, we are now able to evaporate the alcohol from the wine, without losing the aromas. We do this by mechanical distillation under a vacuum. With the high pressure due to the vacuum, the evaporation of the alcohol already starts at 30 degrees, so you don't have to heat the wine as much as when distilling spirits. This way the fresh and fruity aromas are optimally preserved. The bubble provides an extra bite and refreshing mouthfeel.”

The Mediterranean climate of Provence is ideal for viticulture. On average, the sun shines here for 3000 hours a year. In addition, a cool wind blows from the Mediterranean Sea, so that the grapes remain in top condition. The three grape varieties in this bubble each add their own qualities. Chardonnay is often used for sparkling wines because of its neutral character. The great advantage of the ugni blanc is that it retains a high acidity when it is ripe. Those acids provide tension in this wine. Airén has a slightly riper taste and brings balance with ripe fruit such as apples and pineapple.
