“As the name suggests, Pinot Grigio moves into a gray area; Due to the red skin, the grape is literally not white or red. Many wine growers choose to make white wine from this. But most of the flavor is of course in the skin of the grape. By leaving the skins in the grape juice for longer, the wine not only gets more flavor, but also more body and structure.”
