Because the world was at one point flooded with ditch-watery Prosecco, mainly due to the high demand from America, a lot of effort has been put into better protecting the region and giving it a quality boost. Since 2009, Prosecco has been a recognized region of origin and no longer just the name for the wine. Until then, prosecco was also used as the name for the grape, but it is now officially called glera. Prosecco is made according to the charmat method in which a second fermentation takes place in a closed tank. The addition 'extra dry' on the label does not mean that the wine is bone dry. It is even slightly softer and fruitier than a brut, but still nice and fresh with a pleasant roundness.
