Hilton Ironstone Syrah

Stellenbosch, South africa
Syrah
Richard Hilton enjoyed a classic winemaking education in France. When he started his own project in Stellenbosch, he was sure he was going to do things differently from his compatriots. No bombastic African syrah, but instead a refined and elegant style, held to the high French standard of the northern Rhone.

About the winemaker

“In 2003, we started making typical Cape wines. Our philosophy is to showcase the complexity and typicity of the grape variety and our unique terroir. Origin and 'the feeling' are of utmost importance. I have completely immersed myself in two grape varieties: Viognier and Syrah. Both are originally from the Rhône Valley but exceptionally suited for the Atlantic climate here on the Cape."

"This spends 18 months in older barrels. Good quality, pepper and spice, and a gamy edge to the black fruit. Definitely cool climate in style, lovely roses, touches of black forest fruit and though substantial and full, there's a pleasing edge of freshness running through this."

Stellenbosch is also known as the 'oak town.' This is because in the past, a large number of oak trees were planted to make wine barrels. Due to the warm climate, oak trees grow very fast here, resulting in large grain in the oak wood. As a result, they are less suitable for aging wine, as the grain allows too much oxygen in, causing wines to oxidize more quickly. That's why many South African winemakers prefer to use European oak, and many South African oak trees remain standing.
