About the winemaker

“Cava is the Spanish answer to champagne. It is made according to exactly the same process, namely with a second fermentation in the bottle. What not many people know is that cava is derived from the Spanish word for underground cellar. The cavas have to spend at least 9 months there.”

Penedès is the large wine region southwest of the Catalan capital of Barcelona. This is where about 85% of all Spanish cavas come from. This cava owes its unique taste to the classic blend of macabeo, xarel-lo and parellada. The macabeo grape provides the lighter tones in the cava. The parellada gives the wine a fresh citrus flavor, while the xarel-lo is responsible for the structure of the wine, keeping it well balanced.
