About the winemaker
“The Nit del Foc takes place during the annual Fallas festival. Tuesday is a big party here in Valencia, which everyone looks forward to. Especially for this festival, each district makes large statues that are burned at the end. This tradition is now also on the UNESCO list. When I was looking for a name for my Cava I didn't have to think long; the bubbles in the wine are just as festive as our annual fireworks”

Cava is actually made in the same way as Champagne. Just like Champange, Cava also undergoes a second fermentation in the bottle. Although Cava is mainly associated with the Penedès region of Catalonia, it is also produced in other parts of Spain, including Valencia. Although the best-known producers can still be found in Penedès, Valencia is working hard. In fact, the latest and more exciting Cavas come from this area. In Valencia, for example, there is a relatively wide variety of soil types, fresh sea breezes blow through the vineyards and Cavas Marevia even works completely organically.
