“My father taught me that when making wine you have to rely on your senses and on nature. That is why I harvest and select the grapes by hand. I also work organically as one of the few winemakers in Castilla la Mancha. I am the fourth generation winemaker in our family and hope to pass on the knowledge and skills we have acquired to my son.”

In La Mancha, the wine region on the high plateau in the middle of Spain, they make sauvignon blanc that, in terms of style, is exactly in between the versions from France and the new world. It is very warm in this region, even boiling hot during the day. The nights, on the other hand, are freezing cold.
