"Pet Nat is short for "pétillant naturel," or natural bubbles. This method of making sparkling wine is even older than the famous méthode traditionelle of champagne or the Charmat method known from prosecco. The biggest difference is that in these methods, the wine undergoes a second fermentation, whereas with Pet Nat, the wine goes into the bottle with a small amount of unfermented grape must and matures in one go, without further filtration. This makes the result more difficult to control, but it's pure nature."

Weinviertel, Austria
The Weinviertel is Austria's most northern and largest wine region. Situated between the Danube River and the Czech border, it's essentially Grüner Veltliner country. Almost half of all Grüner Veltliner plantings worldwide are found here. However, alongside this local hero, you'll also find Welschriesling, Sauvignon Blanc, Zweigelt, Blaufränkisch, and quite a few members of the Pinot family, both white and red. Despite perhaps not being the most renowned area, it's incredibly interesting. Wine trade has played a significant role here for centuries. Around Retz, extensive wine cellar complexes lie beneath the old town. Many winemakers are small family businesses that have been making wine for generations. Each family has its own terroir, and each family has its own way of winemaking. This diversity results in a wide range of wine styles, from crisp whites to fuller-bodied reds. One thing is certain: with the arrival of a new generation of winemakers, the Weinviertel is truly a region to keep an eye on!
