“Bierzo is the big exception to the Spanish rule. While most wine regions make strong wines and attribute quality to maturation in wooden barrels, in Bierzo we do so in vineyards. Actually just like in Burgundy, not every vineyard produces the same quality grapes. For this wine I use grapes from my oldest and most high-altitude vineyards.”
